Section 1

Prep

  1. Heat oven to 180C/160C fan/gas 4. If available, choose a setting that provides heat from below.
  2. salted butter a loaf tin and line the base and sides with baking parchment (or use a ready-made liner)

Section 2

Batter

  1. Use a standing mixer or hand whisk to cream salted butter and caster sugar until light and fluffy
  2. Beat the medium egg and slowly add to the mix with a little bit of the self-raising flour
  3. Fold in the remaining self-raising flour and baking powder
  4. Mash the banana and fold in to the batter
  5. Sprinkle over milk chocolate chips

Bake

  1. Pour the mixture into the tin and bake
  2. Start checking after 30/40 minutes using a skewer (it should be able to be inserted and removed cleanly). Baking time will depend on number of portions and style/size of tin
  3. Once ready, cool in the tin before removing and cooling on a wire rack

Section 4

Freeze

  1. Cut into individual portions and cool at room temperature for 1-2 hours
  2. Wrap slices in clingfilm. Use a sticker to keep the packet closed - clingfilm loses its stickiness in the freezer!
  3. Add to your Nomventory and store in the freezer - it should be good for 60-90 days.

Defrost

  1. Place a slice in your fridge overnight - it should be ready by morning.
